Well you see, it was right before we went grocery shopping. The cupboards were just about bare, not too much that could be thrown together … except steak fajitas. A top sirloin, tortillas, bell pepper, onion, cilantro … but wait, my weakness … sour cream! I frantically searched, but for naught. But behold, from inside the cold depths of the refrigerator came a beacon of hope, cream cheese … hmmmm. That wonderful sight was the beginning of what is now one of my very favorite meals!
2 cups fajita meat (steak, chicken, etc…)
1/2 cup sliced bell peppers (red, green, and yellow)
1/4 cup sliced onions
1 teaspoon cilantro
1 cup whipped cream cheese
1 tablespoon hot sauce (I like Valentino or Louisiana)
4 flour tortillas
3 tablespoons olive oil
Thoroughly mix cilantro, hot sauce, and cream cheese together.
Sauté fajita meat in skillet and 2 tablespoons olive oil until cooked. Remove from pan and set evenly on plate with paper towel to drain grease. Season to taste. Cover.
Sauté onions and bell peppers in 1 tablespoon olive oil. Set on seoarate plate with paper towel to drain. Cover.
Spread cream cheese mix evenly on tortillas. Mix onions, bell peppers, and fajita meat together in bowl. Serve with beans, rice, salsa, or your other favorite sides!
