This is a dense and very sweet flavored banana bread. Made best with very very ripe bananas.
2-1/2 cups flour
1 teaspoon salt
2 teaspoons baking soda
2 sticks soft butter
1 cup sugar
2 cups mashed banana (about 6 bananas)
4 eggs
1 cup chocolate chips
1 cup walnuts (optional)
Whipped cream cheese
Preheat oven to 350 degrees. Grease two standard bread loaf pans with butter, then dust with flour.
In a small bowl, sift together the flour, salt, and baking soda.
In a larger bowl, cream together the butter and sugar; add the bananas and mix. Then mix in the eggs.
Slowly add the dry ingredients to the wet ingredients, stirring as you go. Once the wet ingredients are incorporated, add the walnuts and chocolate chips.
Pour mixture evenly into the two pans. Bake for 60 to 70 minutes. Check for doneness by inserting a broom straw, or skewer into the center of the pan. When it comes out clean, the bread is done. Let cool for 5 minutes, then turn out onto a rack to cool. For a delicious breakfast or tea, serve very cold spread with cream cheese.
