If you like the flavor of celery, you’ll love this tasty soup!
2 tablespoons butter
1 onion, peeled and chopped
4 to 5 stalks celery, finely chopped
1/4 cup chopped celery leaves
1 tablespoon flour
1 cup chicken stock
1 cup cream
Salt and pepper to taste
Melt butter in soup kettle or saucepan. Sauté onion, celery, and celery leaves until tender. Sprinkle with flour and stir until blended. Slowly add stock, stirring constantly until mixture is smooth. Add cream and cook 5 minutes over low heat until soup thickens. Season with salt and pepper.
