Cooperstown Banana Bread

Make 2 loaves using 8-1/2×4-1/2 -inch bread pans or increase the baking time to 65 minutes and make one large 9×5-inch loaf. This is a favorite at the inn’s Continental breakfast. –The Inn at Cooperstown, Cooperstown, New York

Makes 1-2 loaves

Ingredients

2-1/2 cups flour
1/2 cup granulated sugar
1/2 cup packed brown sugar
1-1/4 cups mashed ripe bananas
1 cup chopped walnuts
3-1/2 teaspoons baking powder
1 teaspoon salt
3 tablespoons oil
1/3 cup milk
1 egg

Instructions

Preheat oven to 350°F. Combine all the ingredients and stir to form a smooth batter. Do not overmix. Pour the batter into 2 small (or 1 large) loaf pans. Bake 55-65 minutes or until done. Remove from the pans and cool thoroughly on wire racks before slicing.

  1. I made this for my daughter and my son-in-law, who are fans of the sport and Cooperstown. Now, it is their favorite banana bread. It is so simple to put together, and so good! It is a grand slam in our kitchen!
