Colonial seaports received plentiful supplies of raisins, which were used in cooking and as treats for children. This recipe, from the Oldport Committee of the Newport (Rhode Island) Historical Society, is made as part of the city’s extensive Christmas celebration.
1/2 cup butter
1 cup sugar
1 egg, beaten
1 teaspoon vanilla
1-1/2 cups flour
1/2 teaspoon baking soda
1/2 teaspoon salt
1/2 cup raisins
Preheat oven to 375 degrees F. Grease cookie sheets. Cream together butter and sugar. Add beaten egg and vanilla. Sift together flour, soda, and salt. Stir this bit by bit into creamed mixture and beat well. Fold in raisins. Form by heaping tablespoonfuls and drop 3 inches apart on greased cookie sheet. Bake 12 to 15 minutes.
