1 cup water
2 cups sugar
1 cup unsweetened cocoa powder
1/2 cup creamy peanut butter
1 tsp vanilla
bring cup of water to boil in medium saucepan over medium heat. Whisk in sugar and cocoa. Whisk continually until bubbles form around edge of pan. Simmer until thickens slightly – about 3 minutes.
Reduce to low – whisk in peanut butter. Simmer until thickening and is smooth – whisking occasionally about 3 minutes.
Remove from heat and add vanilla.
Cool slightly – can be made a week ahead.
