2 tbsp sugar
3 tbsp heavy cream
1 oz fine quality bittersweet coarsely chopped chocolate
1/8 tsp vanilla
cook sugar in a heavy saucepan over moderately high heat until sugar begins to melt – 2 mins.
Stir occasionally with a fork until sugar is melted into a deep golden caramel – 2 to 3 mins
Once bubbles begin to subside – add chocolate and stir until smooth.
Stir in vanilla – store or use atop ice cream right away…
