1/2 pound thinly sliced chicken breasts
1 egg
1/4 cup unseasoned bread crumbs
1/8 cup parmesan or Romano cheese (grated)
Bunch of Italian fresh parsley (finely chopped)
1/8 cup pine nuts (optional)
1 cup chopped fresh spinach
1/2 Cup of tomato puree
Drizzle of olive oil
Mix egg, bread crumbs, cheese, parsley, pine nuts and spinach and place mixture on each
chicken breast. Roll and toothpick. Drizzle olive oil and tomato puree, then bake at 375 for 20
minutes.
