These vegetarian bean burgers are tasty and fast. For best results, pan-fry as directed rather than grill.
2 tbsp olive oil
1 medium onion – finely chopped
2 garlic cloves
1 teaspoon cumin seeds
2 tablespoons chopped parsley
1 15 oz. can black eyed peas (or cannellini beans)
1 1/3 cup fresh bread crumbs
1 large egg
1/4 tsp chili powder
salt and pepper
Soften onion and garlic in oil. Add cumin – cook 3 minutes.
Off heat stir in parsley and beans. Mash or puree in a food processor. Stir in crumbs – then egg. Mix well and season
