Turban, Hubbard, and Butternut Squash are all traditional.
a 2-pound squash
brown sugar
salt and pepper
lemon juice

Cut the squash into quarters, and remove the seeds and fiber. Place in a pan in which you have put 1/4 inch of water. Sprinkle with brown sugar, salt, pepper, and lemon juice. Dot with butter. Cook covered with aluminum foil in a moderate oven (375 degrees F) for 30 minutes. Uncover, baste, adding more butter if necessary, and bake for 30 minutes longer or until tender.
