a 2-3 pound rabbit, cut in serving pieces
6 tablespoons butter
1-1/2 cups finely rolled salt crackers
1 teaspoon salt
pepper
chopped parsley
Preheat oven to 350 degrees F. Dip pieces of rabbit in melted butter, then roll in cracker crumbs to which seasonings have been added. Place pieces in a shallow baking pan, but do not crowd. Cover the pan with a lid or with aluminum foil. Bake for 1 hour or until tender.
