CHICKEN LIVER MOUSSE
Leave it to the folks at New England’s best gourmet and cheese shop to produce a stellar pâté. (Really, all the charcuterie, made by staffer Julie Biggs, is excellent—try the duck pastrami for a novel treat.) Smooth and silky, with just a hint of brandied sweetness to play off the earthy liver, it’s just about the best thing you could ever slather on a baguette.

Vermont Smoke & Cure
How’s this for a Vermont bacon: First it’s brined with maple syrup and salt; then it’s smoked over corncobs and maplewood. The result is a hearty, thick-cut bacon (it’s also sold diced and in slabs), with just enough sweetness from the maple and the meat itself.
