What started as a small lobster shack on the pier in Portland, Maine, has now grown to 30 stores around the globe. In this season 4 segment of Weekends with Yankee (episode 408), we’re are at Luke’s Lobster to meet co-founder Ben Conniff and learn more about Luke’s global sensation. He uses high-quality lobster meat from a variety of different ports along the coast of Maine, packages it, and distributes it to his various locations. Ben’s philosophy for the perfect lobster roll is quite simple; He prefers to let the meat shine, only using a bit of mayo on the bun, drizzle of butter, and dusting of house-made secret seasoning. Rest assured, because lobstering is one of the most sustainable fisheries, you can never eat too many lobster rolls!
