Yankee contributing editor Rowan Jacobsen recently trekked to Appledore Island — the largest island in the Isles of Shoals group, shared by New Hampshire and Maine — to take part in “Take a Bite Out of Appledore.” Based at the Shoals Marine Laboratory, the annual event is a one-of-a-kind weekend of foraging and fieldwork dreamed up by top Portsmouth chef Evan Mallett and the marine lab’s executive director, Jenn Seavey. The idea? Meet the ecosystem, then eat it.
“On an island, there’s no time for trial and error,” Mallett said. “You find an ingredient, you gotta use it. You just ask yourself, How am I going to put this in front of people in a way that’s delicious and that helps tell the story of this place?”
As Jacobsen helped gather crabs, periwinkles, and other island fauna and flora, Yankee senior photographer Mark Fleming recorded the collection of ingredients as well as their transformation into memorable meals for the weekend attendees.
