Moist and spicy, these easy mincemeat muffins are an extra-special Christmas breakfast treat.

2 cups all-purpose flour
1/2 cup light brown sugar
3 teaspoons baking powder
3/4 teaspoon salt
3/4 cup milk
1 large egg
1/4 cup butter, melted
3/4 cup mincemeat (either store-bought or homemade mincemeat)
1/2 cup chopped walnuts
Preheat oven to 400°. Generously grease 12 muffin cups or line them with papers. Sift flour, sugar, baking powder, and salt into a large mixing bowl. Whisk to blend thoroughly. In a separate bowl whisk together the milk, egg, and melted butter. Stir in the mincemeat. Make a well in the dry ingredients and pour in the egg mixture. Blend with a wooden spoon until a moist, lumpy batter is formed. Stir in the walnuts. Spoon into the prepared muffin cups and bake for 20 to 25 minutes, until muffins test done. Cool on a rack for 5 minutes, then tilt muffins on their sides or transfer them to a rack to complete cooling.
