Bootleg Beans

I obtained this recipe from Heloise from our local newspaper years ago. It’s very nutritious, economical, and a favorite with most everyone.

Yield: 3 to 4 servings


  • 3 strips of bacon, diced and fried
  • 1 small onion, chopped
  • 1 15-ounce can pork and beans
  • 1 tablespoon of brown sugar
  • 2 tablespoons of vinegar
  • 2 tablespoons of catsup


Dice and fry bacon until half done. Add chopped onion, cook until slightly browned, pour off most of the grease. Add pork and beans, brown sugar, vinegar, and catsup. Stir well, cover.

Bake the beans slowly in a 300 degree oven for a couple of hours. Or, if you prefer, you may simmer them very slowly on top of the stove for about 30 minutes.

    I have made baked beans for 50 years, and when I saw this recipe, I found it similar to my own recipe … it is homey, and a proud dish to take to a potluck … or anywhere.
