Texas Caviar

My second mother made this for my wedding 10 years ago. It was a BIG hit, we have used it many times since.

Yield:

12-15 servings

Ingredients

2 cans black eyed peas, drained
1 can hominy, drained
1 tomato, chopped
1 small bell pepper, chopped
1 small onion, chopped
1 clove garlic, crushed
1 bottle Italian Dressing

Instructions

Mix all ingredients together and allow to marinate in the refrigerator for 24 hours. Drain and serve as a side dish or with chips as a salsa.
