the base of this recipe is the old Jordan Marsh blueberry muffin recipe. I made a few changes to that recipe.
1/2 c butter
1 c sugar
2 eggs
2 c all purpose flour
2 tsp. baking powder
1/2 tsp. sea salt
1/2 c Bolthouse Vitamin C Boost
1 tsp. vanilla
1/2 tsp. cinnamon
orange zest from one orange or as desied
1 tsp. orange oil
sanding sugar (opt)
cranberries as desired
1/2 tsp. baking soda
Bake 375 degrees for 30 minutes.
Grease one jumbo six muffin non stick pan.
Cream butter and sugar ( not sanding sugar).
add eggs one at a time.
add vanilla and orange oil.
add dry ingredients alternately with Bolthouse Vitamin C Boost.
add cranberries – you don’t need a whole lot.
put batter in pan and sprinkle tops of muffins with the sanding sugar.
bake. These muffins brown up nicely and are best warm out of the oven!!!!
