I have a cook book called “500 Treasured Country Recipes” and I am going
through it finding recipes that can be used or converted to be more
traditional. I tried this one last night…
1 cup w.w. pastry flour
2 tsp.baking powder
1/4 tsp salt
1 tsp baking soda
1 Tbsp honey
3 eggs, separated
2 cups sour cream
1 tsp grated orange or lemon zest
I mixed the flour and sour cream and left 0vernight to soak (prob’ly should
do longer, it was only 8 hours). Then I added the egg yolks and other
ingredients. Lastly beat the egg whites until fluffy and mixed into the
batter. They were pretty good!
