2/3 cup vegetable oil
1 cup sugar
1 cup molasses
1 medium egg, well beaten
3 teaspoons baking soda, dissolved in 1/2 cup boiling water
5-1/2 cups all-purpose flour
3 teaspoons cream of tartar
1 teaspoon ginger
1 teaspoon cinnamon
1/2 teaspoon salt
Beat together oil and sugar; add molasses and beat well. Stir in egg. Add soda and water. Sift together dry ingredients and add, mixing well. Chill for several hours. Roll out 1/4 inch thick on floured and sugared surface. Cut out cookies and bake at 400 degrees F on greased cookie sheets for 8 to 10 minutes. Watch carefully.
