This seven-layer dinner recipe makes a perfect one-pot, family-style meal. To save time, you can substitute canned or frozen peas or green beans for some or all of the green pepper, celery, or mushrooms.
1 pound ground beef
4 medium-size potatoes, peeled and sliced
1 cup sliced onions
1/2 cup uncooked rice
1 can (15 ounces) diced tomatoes
1 green bell pepper, sliced
1 stalk celery, sliced
1 cup sliced mushrooms
4 slices bacon
cold water
In a large nonstick skillet, brown the ground beef. Drain off any excess fat. Preheat the oven to 350 degrees F.
Line a 3-quart or 4-quart casserole with the potatoes. Spread the onions over the potatoes, then add the ground beef. Sprinkle the rice over the beef. Pour the tomatoes over all and top with the vegetables. Place the bacon on top of the casserole. Add enough cold water to just cover the casserole. Cover and bake for 1-3/4 hours.
