At the Americus Garden Inn Bed & Breakfast, my guests love these sausage pancakes. I know your family will enjoy them, too.
1 cup whole wheat flour
1 cup all-purpose flour
2 teaspoons baking powder
1/2 teaspoon baking soda
2 eggs
2 cups buttermilk (or sour milk*)
2 tablespoons oil
1 pound cooked, drained sausage (maple is great)
maple syrup
In a large bowl, combine flour, baking powder and baking soda.
In a medium bowl, whisk eggs with milk and oil. Stir wet into dry ingredients just until moistened. Fold in sausage.
Pour by 1/4 cupfuls onto greased hot griddle.
Flip when bubbles form and cook second side until golden. Serve with warm maple syrup.
*To sour milk, place 2 tablespoons white vinegar in a 2-cup measuring cup. Add milk to measure 2 cups. Let it sit a few minutes before using.
