This recipe is very similar to Emma Tourangeau’s, except that it has no cloves.
12 small beets, cooked and cut in slices or cubes
1/4 to 1/3 cup sugar
1/2 tablespoon
cornstarch
1/4 cup vinegar
1/4 cup water
2 tablespoons butter
Mix sugar and cornstarch together in a medium-sized saucepan F. Add vinegar and water, and boil 5 minutes. Add beets to hot sauce and let stand 30 minutes. Just before serving, bring to a boil and add butter.
