Salsa

Mix fresh vegetables and herbs together to create this summer salsa recipe.

Yield:

1 cup

Ingredients

1 tomato, peeled, seeded, and chopped
1 green onion, sliced
1/4 cup sliced black olives
3 tablespoons reserved marinade (see above)
1 tablespoon seeded, chopped jalapeno
1 tablespoon chopped cilantro
1 tablespoon chopped mint
1 tablespoon slivered almonds
1/4 teaspoon salt
1/4 teaspoon pepper

Instructions

Combine all ingredients in a bowl, mix together, and chill.
