A mouthwatering combination for a festive dinner.
4 salmon steaks (8 ounces each)
1 tablespoon butter
1/2 cup white cooking wine
1/2 teaspoon black pepper
4 scallions, trimmed
8 ounces ripe tomatoes, peeled
2 tablespoons olive oil
1/2 teaspoon sugar
1 tablespoon tomato puree
2 teaspoons chopped fresh oregano
Garnish: oregano sprigs
Preheat oven to 275 degrees. Put salmon steaks into buttered, ovenproof dish. Pour wine over the fish and sprinkle with pepper. Cover with foil and bake 15 minutes, until the salmon is just cooked. Set aside to cool. Put scallions, tomatoes, and remaining ingredients, except oregano, into a food processor and process in bursts until chopped. Add the chopped oregano and mix briefly. Serve salmon cold with the salsa, garnished with a sprig of oregano.
