2 chicken breasts with skin, cut in half
salt and pepper, to taste
2 cloves garlic, crushed
4 large fresh basil leaves
2 tablespoons olive oil
2 tablespoons fresh lemon juice
Preheat oven to 400 degrees F. Place chicken breast halves, skin side up, into a 13×9-inch baking dish and sprinkle with salt and pepper. Using fingers, loosen skin from the flesh of the chicken, forming a pocket under the skin. Spread a little of the crushed garlic and a basil leaf under the skin of each chicken breast. Drizzle chicken with olive oil and lemon juice. Roast chicken, basting with pan juices once or twice, until skin is golden and chicken is cooked through, 35 to 40 minutes. Excellent served warm, at room temperature, or cold.
