1 pound English walnuts, shelled
1/2 cup brown sugar
2 cups maple syrup
1 cup apple vinegar
1/2 teaspoon each of ground cloves, ginger, and mace
grated rind of one lemon
2 jiggers dark rum
Boil together all of the ingredients except the nuts and rum until the sauce is well thickened, about 10 minutes. Add the nuts and rum and simmer for 10 minutes longer. Seal in bottles while still hot. Excellent served with game.
