Peanut Butter Corn Flake Cookies

This recipe was given to me by my grandmother. It is quick, easy, and simple. Also, these cookies are great on the go.

Yield

about 25 cookies

Ingredients

1/2 cup light corn syrup
1/2 cup sugar
1 cup creamy (or crunchy) peanut butter
3 cups corn flakes
wax paper

Instructions

Once you get started you need to keep stirring, so measure the ingredients and have ready.

In a large pot heat the corn syrup until almost boiling; add the sugar and stir well. Stir constantly. Add peanut butter until melted, then add the cornflakes. Mix well, and remove from heat.

Use an ice cream scoop to measure out cookies onto waxed paper. Allow to cool.

Notes

Melt the peanut butter in the microwave to measure it more easily.

  1. My grandmother used to make these for me and now I make them for my kids all the time. They love them and easy to make.
