Sugar Snap pea pods are a plump, round variety of edible pods. They are delicious when lightly blanched and served chilled with a light green mint-flavored dipping sauce.

1 cup sour cream
1/4 cup mayonnaise, preferably homemade
1 teaspoon sugar
1/2 teaspoon salt
1 tablespoon chopped fresh mint
Mint leaves for garnish
1. String the pea pods and drop them into a large pot of boiling, salted water. Boil for exactly 1 minute, then drain in a colander set under cold running water. Transfer to a clean kitchen towel and pat dry. Refrigerate until serving time.
2. In the container of a blender or processor, combine the sour cream, mayonnaise, sugar, salt, and mint. Whirl until smooth, then pour into a small glass dish. Cover the dish and refrigerate until cool.
3. Arrange the chilled pea pods on a large serving plate or over a bed of crushed ice. Garnish with fresh mint leaves and serve with the mint dipping sauce on the side.
