Pea Pods Stuffed with Crabmeat

Pea pods stuffed with chilled crabmeat make a refreshingly elegant appetizer.

Ingredients

48 pea pods
12 ounces snow crabmeat
1/2 green bell pepper, seeded and finely chopped
2 tablespoons crushed pineapple, drained
2 slices baked ham, finely chopped
1/3 cup mayonnaise, preferably homemade
Salt and freshly ground black pepper

Instructions

1. String and blanch the pea pods if necessary. Slit them open along one seam with a paring knife and set aside.
2. Flake the crabmeat into a small bowl. Add the green pepper, pineapple, ham, and mayonnaise and stir to blend. Season with salt and pepper. Spoon the filling into the opened pea pods. Stand them, seam side down, in a shallow, rectangular serving dish, packing them tightly. Cover the dish and refrigerate until thoroughly chilled.
