Oven Pancake

Ingredients
2 tablespoons butter or margarine
2 eggs
1-1/4 cups milk
3/4 cup flour
1-1/2 tablespoons sugar
1/2 teaspoon baking powder
1/4 teaspoon salt
Instructions
Preheat oven to 400 degrees F. Melt the butter or margarine in a 9-inch square baking pan. In a medium bowl, beat together the eggs and 1/4 cup of the milk. In another bowl, sift together the flour, sugar, baking powder, and salt, and add to the egg and milk mixture. Slowly add the remaining 1 cup milk and mix. Pour over the melted butter in the pan and bake 20 minutes.




I came across this recipe in Yankee Magazine a few months back. I tried it and loved it. I served it to my daughter, her husband, and 4 children. They all loved it. Each time they come to Gramma’s they request this for breakfast. 5 STARS!
