A very old recipe that’s come into its own in recent years due to the growing interest in fiber foods.
1 cup whole bran
3/4 cup orange juice
1/2 cup milk
2 cups sifted all-purpose flour
1/2 cup sugar
3 teaspoons baking powder
1/4 teaspoon baking soda
1 teaspoon salt
grated rind of 1/2 orange
1 egg, well beaten
1/4 cup melted shortening
Combine the bran, orange juice and milk. Let stand 15 minutes. Sift together the flour, sugar, baking powder, soda and salt.
Combine the grated orange rind, beaten egg and melted shortening and add to the bran mixture. Then add the sifted dry ingredients, mixing only until blended.
Turn into a greased loaf pan (9×5 inches) and bake in a 325 degree oven for 1 hour and 15 minutes.
