Oatmeal Muffins

8 muffins

Ingredients

1 cup oatmeal
1 cup buttermilk
1/4 cup butter, melted
1/2 cup whole wheat flour
1/2 cup white flour
1/2 cup sugar or packed brown sugar
1/2 teaspoon salt
1/2 teaspoon baking soda
1-1/2 teaspoons baking powder
1 egg

Instructions

Preheat oven to 400 degrees F. Mix together oatmeal, buttermilk, and butter and let sit in warm place while mixing the rest of the ingredients. Sift together all dry ingredients. Add egg to oatmeal mixture and blend well. Mix in dry ingredients. Pour batter into greased muffin pans. Bake 18 minutes.
