1/2 stick butter or margarine
2 tablespoons Dijon-style mustard
1 cup bread crumbs
1/3 cup grated Parmesan cheese
1 teaspoon tarragon
1 cut-up chicken (about 3-1/2 pounds)
In small saucepan, melt butter and mustard. In small bowl, combine bread crumbs, grated cheese, and tarragon. Place chicken, skin side up, in baking pan. Generously brush with butter mixture; then sprinkle with half the crumbs. Turn chicken pieces over and repeat. Cover pan and place in 375 degrees F oven. Bake for 30 minutes. Remove cover, turn pieces over, and bake uncovered for another 30 minutes.
