1/2 cup butter or marg.-soft
1/2 cup packed brown sugar
1 egg
1/2 cup molasses
2.5 cups ap flour
3/4 tsp baking soda
1/2 tsp salt
1/2 tsp ground cinnamon
1/2 tsp ground ginger
1/2 cup strawberry preserves
glaze:
1 2/3 cups confectioner sugar
2 tbsp water
1/4 tsp vanilla extract
in large mixing bowl – cream butter and sugar. Add egg; mix well. Beat in molasses. Sep. bowl; combine flour, soda, salt, cinn. and ginger; add to creamed mixture – mix well.
Dough will BE stiff
Cover and chill several hours
On lightly floured surface – roll out dough to 1/8 thickness; cut out 1/4′ to 2 1/2′ circles. place 1/2 tsp preserves on helf of circles – top with remaining cirles. pinch edges to seal. place on greased baking sheet – bake at 350deg. for 10 minutes or until lightly browned.
Combine glaze ingredients – frost cooled cookies. Unfrosted cookies can be frozen…
