LIGHT Eggnog Cookies

This is a holiday recipe that we (even my young children, who do not like eggnog) love to enjoy as a treat. The adults like to have the cookies with coffee or eggnog and the children with a big glass of cold milk.

Yield

About 45 cookies

Ingredients

2/3 c. butter
1 c. sugar
1/2 tsp. nutmeg
3/4 tsp. baking powder
1/4 tsp. salt
1 egg
1/2 c. Hood Light Eggnog
2 1/2 c. flour
Eggnog frosting (simply Hood Light Eggnog and enough Confectionery Sugar to make a frosting consistency).

Instructions

Beat butter for about one minute. Add sugar, nutmeg, baking powder and salt; beat until well combined.

Add egg and eggnog; beat until well combined.

Beat in the flour until just combined.

Chill dough until easy to handle (about 2 – 3 hours).

Preheat oven to 350 degrees.

Roll out dough in flour, sugar and nutmeg. Cut out cookies.

Bake for about 8 minutes or until edges are browned.
