Jan’s Banana Bread

After using several recipes I changed them all until I got what I like.

Yield

1 standard bread pan

Ingredients

3 large or 4 medium very ripe bananas
1 cup sugar
2 eggs
1-1/2 cups flour
1/2 cup melted butter
1 teaspoon baking soda
1 teaspoon salt (optional)
chopped nuts (optional)

Instructions

Preheat oven to 325 degrees (300 degrees if glass baking dish). Grease loaf pan.
Mash bananas and add 1 cup sugar, 2 eggs and 1/2 cup melted butter. Mix well. Mix flour, baking soda, salt and nuts. Mix both bowls together and pour into loaf pan.
Bake for 1 hour or until done (toothpick inserted comes out clean).

Tips: The older and darker the banana the more flavor. If you have no ripe bananas freeze them and they will become soft. (Not as much flavor, you may want to add 1 teaspoon banana extract).

Enjoy warm or cold. Plain, with butter or cream cheese.

  1. It was moist and nice without being heavy. Toasting the walnuts gave it that extra flavor. I highly recommend this for home, gift or have to bring food recipe.
