4 quarts water
2 tablespoons olive oil
1 pound Italian sausage
1 yellow onion, chopped
4 cloves garlic, minced
1 cup dry white wine (optional)
1/2 cup sun-dried tomatoes
1 tablespoon fresh oregano, or 1 teaspoon dry
1 pound pasta of your choice
grated Parmesan, as garnish
Bring water to a boil. Meanwhile, heat olive oil in a skillet. Remove sausage from the casings, crumble into skillet, and brown. Set aside sausage, then brown onion and garlic. Add wine (or water), then the sun-dried tomatoes, drained and chopped. Add sausage and oregano. Cook pasta, then toss with the sauce and top with Parmesan.
