Hot Dog Relish

This is a simple and inexpensive way to “put by” a good share of your family’s hot dog relish supply.


Makes about 10 half-pints.


4 quarts green tomatoes
2 onions
4 green peppers
1/4 head cabbage
1/2 cup salt
1 teaspoon mixed pickling spices
3 cups vinegar
1 cup water
2 cups sugar


Wash vegetables and put them through the coarse blade of a food chopper. Add salt and let stand for several hours. Drain liquid from vegetables; discard liquid. Tie the spices in a cloth bag, and combine with vegetables, vinegar, water, and sugar in a large kettle. Simmer for 30 minutes. Remove cloth bag. Seal relish in hot sterilized jars.
