1 recipe pastry
6 cooking apples
6 tablespoons sugar
6 teaspoons butter
raisins (optional)
cinnamon, sugar, and butter
Roll the pastry 1/8 inch thick and cut into 6 squares. Pare and core the apples and place one on each section of dough. Fill the hollow of each apple with 1 tablespoon of sugar and 1 teaspoon of butter and, if you like, a few raisins. Fold the pastry over the apples pressing the edges together. Place in a shallow pan, sprinkle with cinnamon and sugar. Dot with butter. Bake in a 400 degrees F oven for 30 to 40 minutes. Serve while still warm with heavy cream or with hard sauce. With the hard sauce you may, if you have strong guests, also pass Brandied Apricot Sauce.
