Hot and Sour Soup

Ingredients

1-2 sliced onions
3-4 cloves garlic or green garlic
1-2 inches grated ginger
Add:
Water to fill pot about 1/2 to 2/3 full
1/3 cup rice or white vinegar
1/3 cup tamari or soy sauce
1/3 cup honey
Cayenne to taste
Fresh ground black pepper to taste

Instructions

This is the basic stock: taste and adjust for hotter, cayenne or black pepper or sour, vinegar, or sweet, honey.

If your family eats tofu now is the time to add it: cut it in to little squares. Let the tofu simmer for 5-10 minutes.

Option: You could also bring the soup to a boil, and add noodles at this point. 5 minutes before you want to serve add any “firm” veggies you may have: carrots, broccoli, etc. 2-3 minutes before you want to serve add lots (1-2 full bunches) of chopped greens: kale, collard, Napa cabbage etc. all work well. Enjoy!! Garnish with Cilantro if desired.
