Gem is an old-fashioned word for muffin. This recipe doubles well, but it works best in miniature muffin tins.
2 tablespoons lard
1/4 cup chopped pecans
1/4 cup honey
1 cup flour
1/2 tablespoon baking powder
1/4 teaspoon salt
1 egg
6 tablespoons milk
turbinado sugar
Preheat the oven to 400 degrees F. Microwave the lard, nuts, and honey together for about 2-1/2 minutes or until the lard melts; or melt in a small saucepan over low heat. Sift the dry ingredients together into a bowl and add the nut mixture.
Beat together the egg and milk and add to the batter, mixing only until moistened. Divide the mixture among 12 mini muffin cups that have been greased with butter or sprayed with nonstick cooking spray. Sprinkle on the turbinado sugar and bake 12 minutes.
