Honey-glazed carrots shimmer so beautifully in candlelight that they make an especially nice dinner-party vegetable.
1 pound carrots
1 teaspoon sugar
4 tablespoons butter
2 tablespoons honey
Salt and freshly ground black pepper
Freshly grated nutmeg
1. Cut the carrots diagonally into 1/4-inch-thick slices. Transfer to a wide saucepan and add enough water to cover the carrots by 1 inch. Add the sugar and 2 tablespoons of the butter. Place over medium heat and cook, uncovered, at a gentle bubble for 10 to 12 minutes or until tender.
2. Add the honey and the remaining 2 tablespoons of butter. Increase the heat and cook, stirring constantly, until all the liquid is evaporated and the carrot slices are coated with a shiny glaze. Season with salt and pepper, then transfer to a serving dish. Sprinkle with freshly grated nutmeg.
