Wash several handfuls (equal to the number of servings needed) of green beans and put them in a pot/pan of water almost covering the beans. Simmer them gently till they turn bright green, then drain and put in a bowl. Salt lightly. While the beans are simmering put 2 tablespoons of Olive Oil on a bowl and chop or mince 2-3 cloves of garlic. Let the garlic infuse the oil for about 10-15 minutes while the beans cook to almost tender or crunchy texture. Then pour the olive oil-garlic mixture onto the green beans, stir a bit and you have a wonderful and delicious side dish.
They’re also good cold the next day.
