3 scallions, roughly chopped
4 roasted red peppers
2 tablespoons chopped basil, plus extra whole leaves for garnish
1 large or 2 small garlic cloves, roughly chopped
2 tablespoons (approx.) extra-virgin olive oil
Kosher or sea salt
Freshly ground black pepper
In the bowl of a food processor, combine ingredients until smooth. Adjust seasoning. Transfer to a serving bowl and garnish with ribbons of basil.
