Glorified Rice Pudding

An old-fashioned treat adorned with whipped cream and maple syrup. –Old Town Farm Lodge, Gassetts, Vermont

Yield

Serves 6

Ingredients

3 cups milk
1/3 cup rice, rinsed (do not use quick-cooking rice)
Pinch of salt
1/2 cup sugar
1 teaspoon vanilla
1 envelope unflavored gelatin
Maple syrup
1 cup whipped cream

Instructions

Put milk in double boiler, add rice and salt, and cook, covered, until soft–about 45 minutes. Remove from heat and add sugar, vanilla, and gelatin, stirring to blend. Pour into a bowl and chill thoroughly. When ready to serve, top with syrup and whipped cream.
