Dixie Lee’s German Apple Cake from Joanne Fluke’s book Plum Pudding Murder p. 234
4 c peeled and sliced apples (4 or 5 medium apples)
3 eggs
1 c oil
2 c sugar
1 t vanilla
1 t baking soda
2 t cinnamon
1/2 t salt
2 c flour (pack it down)
Frosting:
8 ozs. cream cheese, softened
2 t vanilla
1 T lemon juice
4 T melted butter
2 c powdered sugar
Grease 9x 13 pan
Peel, core, and slice apples. Place on the bottom of pan.
In med. bowl, whisk eggs with oil until they’re thick. Add sugar and beat it in.
Mix in vanilla, baking soda, cinnamon and salt. Mix thoroughly.
Add flour in one-cup increments, mixing after each cup.
Drop batter over apples in spoonfuls.
Bake at 350 degr. for 60 minutes. Mine took only 50. Cool cake in pan on rack.
Frosting:
Soften cream cheese, stir in vanilla. Add lemon juice and melted butter. Mix until smooth. Beat in powd. sugar in half-cup increments. When it’s consistency of frosting, add no more sugar.
