/2 cup peanut butter (could use other nut butters)
1/2 cup honey
1/4 cup coconut oil or butter, softened
1/4 tsp salt
1/4 cup plus 2 TBS sifted coconut flour
1/2 cup flaked coconut
1 cup mixed nuts
1/2 cup raisins or other dried fruit
Mix peanut butter, honey, coconut oil and salt together. Stir in coconut flour and mix thoroughly. With your hands, work in flaked coconut, nuts and raisins. Roll dough into 1 1/2 inch balls, place on greased cookie sheet and flatten balls to a diameter of about 2 inches. bake at 375 for 12 min until golden. When hot cookies are soft and crumbly, allow to cool for a few min before removing from pan. *Can replace honey with gluten free rice syrup and add 1/8 tsp liquid or powdered stevia if extra sweetness is desired.
