An outstanding way to prepare fish filets–coated with buttermilk batter and bread crumbs, then baked until golden and slightly crisp. –The Vermont Inn, Killington, Vermont
1 cup heavy mayonnaise
1 cup buttermilk
1 cup lemon juice
1 teaspoon granulated garlic
Salt and pepper to taste
8 filets of fresh Boston scrod (6 ounces each)
2 cups bread crumbs
Lemon garnish
Mix first 5 ingredients to form a batter; coat fish filets with batter and then with bread crumbs; bake at 450 degrees F for 12-15 minutes on greased baking sheet. Serve with lemon garnish.
