The mince pie filling makes enough for at least 12 pies. Elaine freezes it in one-quart plastic containers. One quart makes one pie.
4 pounds ground beef
8 pounds apples
2 boxes raisins
1 box currants
1 pint vinegar
1 quart orange juice
2 pounds ground suet
2 cups molasses
2 cups sugar
Cinnamon, nutmeg, and cloves to taste
Simmer all ingredients very slowly until cooked. Line pie plate with crust. Add filling. Cover with top crust. Bake at 450 degrees for 15 minutes, at 350 degrees for 30 minutes.
